As we all know, this upcoming weekend the Super Bowl will be hosted in New Jersey. I feel as though that is ALL our local news channels can talk about. The crowds…the cold….the conflicts and uproar that comes with being the official home to the super bowl…..good grief! This may or may not come as a shock to you…but up until the week, I DIDN’T EVEN KNOW WHOM WAS PLAYING! I have not ONE IDEA how the game of football is played. I know touch downs are a good thing, but the amount of points awarded for one of them….I couldn’t tell you.
Lets be real here: I AM THE GIRL THAT PICKS THE TEAM I CHEER FOR BASED ON 3 FACTORS.
1) The colors of the jersey
2) The cuteness/likability of the quarterback
3) The opposite team as my hubby….I like some healthy competition and opposition, lol
Yup, I totally just admitted all that! Now here are even more awful confessions:
I watch the Super Bowl/attend the parties for THESE 3 reasons:
1) The commercials
2) The food
3) The adult conversation and wives gathered in the kitchen laughing at how intense the hubbies get over a GAME!
So there we go…you now officially know that I am THAT GIRL…and if you invite me to a “sports event/party”….I am there for the food, interaction and will be wearing the jersey of the team YOUR NOT. lol
Having said all that….I wish you and your teams all the luck in the world.
Now…February 2 is more than just the Super Bowl…its groundhogs day!!! That little stinker better come out of his dark hole….under a cloudy sky….and see NO SHADOW if he knows whats good for him.

I am a winter baby, so sure…I love the snow and all things hats and gloves here and there….but this….this winter has tested me. I am going stir crazy inside…and my toes can’t handle the cold any longer. I am ready for warm weather, glowing sunshine and SHOOTING OUTDOORS AGAIN! I need greenery…I need flowers!!!
So, before I bid you a happy PIG SKIN, SHADOWLESS filled weekend….I figured I would share my most favorite game day recipe with you. Have a great weekend yall!
Creamy Mexican Dip with Leftover Taco Meat
- 2 c. seasoned taco meat
- ½ c. reduced-fat cream cheese
- ½ c. salsa (I used a mix of green and red salsas)
- ½ c. shredded Mexican cheese
- tortilla chips
- Preheat oven (or toaster oven!) to 375 degrees F. Spray a small baking dish with cooking spray.
- Add meat, cream cheese, and salsa to a small saucepan, and heat over medium heat. Stir frequently until cream cheese is melted and mixture is bubbly. (You could also do this in the microwave, stirring ever 30 seconds or so.)
- Spread meat mixture evenly into prepared baking dish, and sprinkle cheese over the top. Bake in preheated oven for 15 minutes, or until cheese is melted and starting to brown. Serve with chips for dipping.
